Without getting into how many people avoiding gluten actually have a medical issue with it - some actually do. Putting 'gluten free' on a label is a promise that care has been taken to avoid any possible cross contamination.
You might also be annoyed at labels announcing that the contents were produced in a plant that also processes peanuts (or some other material).
That said, agreed 100% on the default of anything being too-sweet and the general lack of a decent baguette.
