Agreed that most of the reported advantages relate to MCTs and how they quickly become ketones - and that many of the studies you reference don't make enough of a distinction between coconut oil and MCTs from coconut oil.
As far as it being 'the new olive oil', there has been at least one study showing that monounsaturated oils (e.g. olive) trigger SIRT1 significantly more than resveratrol. https://www.ncbi.nlm.nih.gov/pmc/articles/PMC7036014/
