There's a huge change in flavor profile in the first couple of days after coffee's been roasted. They'll tell you to let it sit for a couple of days, but there are some people who prefer the fresh-roast flavor (e.g. me). Only practicable if you can get to a roastery every couple of days. Major thing I missed when I changed from a job that had me commuting past a roastery every weekday. Ah, well...
