It was considered a 'paradox' because the French could eat a butter-drenched diet and have low rates of cardiovascular disease. It's not a paradox at all; from our modern perspective we can label it "so called" as Ancel Keys had jumped to the conclusion that saturated fats were deadly - and managed to persuade pretty much everyone else of that conclusion.
TL;DR If your overarching theory has a notable 'paradox', there's something wrong with the theory.
