I'd also point out that butter from cows feeding on *growing* grass also is high in vitamin K2. FWIW, nutritionists have known for decades that there was something special (they dubbed it 'factor X') coming from growing-green-grass dairy products. It's been relatively recently identified as K2. I would guess that 'alpine' means new growing grass (but my only understanding of how the Swiss move their dairy cows to pasture comes from reading Heidi as a kid). :-)

Also: I'm hoping you get eventually to the differential metabolic paths of odd-chain (which dairy is) and even-chain saturated fats.
