As I understand it, there's a complication to removing all transport over the Dnipro. One of the roads that does across is not a bridge, but the top of a dam - and that dam holds back quite a lot of water. Dam busting would inundate Kherson, so the UA seems to be focusing on the approaches on both sides. I'd expect the rail to take some time to repair in spite of the line on top of the dam being relatively unharmed. Not sure about the road and how usable it might be by heavy truck or tracked vehicle.

That said, staff being evacuated suggests troops left behind will be incapable of changing how they respond, if the UA ends up getting creative. No idea how they might do that; I'm not even an armchair strategist - just remembering how poorly troops did minus staff on the road to Kiev and speculating. Also (apropos that road in Kiev) gotta wonder how much food, fuel and ammo the left-behinds have - and how many might surrender without a shot fired if left to grow hungry and the UA bombards them with "you will be repatriated in the next POW swap" leaflets. Again, just thinking aloud...
