Oddly enough, there seems to be a regional difference in which spices are part of Herbes de Provencal.

As best as I can tell, the mix in Provencal does not include lavender. Elsewhere, even in other departments of France — it does.

I’ve wondered why this might be for some years now, but I suspect it has the same reason as lamb/hoggett/mutton not being on restaurant tables in NZ or the dearth of pineapples in Lanai markets (disclosure: there was only one when I was there). So… too common?
