My personal take is that dementia is more about insulinemia coming from insulin resistance more than anything else BUT protein is a critical dietary input, particularly for those of us north of 50. And to put those two together, although I don't even have observational studies to point out lack of dietary protein could be important for maintaining insulin sensitivity (and so 'normal' insulin levels) in skeletal muscle (in humans the IR 'cascade' appears to start there).

All that said, I make hummus on a regular basis - I'll put my recipe in another response; I'd guess many people will just skip this response...
