I’m curious why you decided not to mention the removal of animal products from your diet.
Maybe because the link between saturated fats and blood lipids has been disproven? And also because the lipid hypothesis ( LDL causes arteriosclerosis) has very little proof (and in my view is something of a scam)?
I’d be more concerned about highly processed animal products (e.g. bacon) than, say, free-range chicken or grass fed beef or mutton.
