It turns rolled oats into a convenience food - and if you're a coffee nerd, it's the quickest (and least energy consuming) way to bring a known quantity of water to *exactly* the temperature you want.
It's also handy for re-warming coffee - just be careful you don't overheat it (major reason this reheat technique has gotten a bad rap)
TL;DR: ditch the factory foods, not the microwave.
