I try to start meals with something other than a carb, but for a different reason.

Between meals, particularly after a fast, our livers are busy producing glucose from fats (de novo glucogenesis) under control of alpha cells in the pancreas that emit glucagon. Insulin (from beta cells) shuts the alpha cells down, but the process of stopping DNGG takes at least a minute or two - so no carbs until then.
