I saw that video maybe eight years ago. He's not wrong. I don't see Dr Johnson's hypothesis as different, just a bit more detailed on the biochemistry, notably how uric acid is involved - and when the reaction might have arisen in our evolution ( in summary: climate changed, no more year-round abundance of food, hominids who put on fat in reaction to heavy fruit consumption in the fall had an evolutionary advantage)
Interestingly (to me, anyway) allopurinol, a gout drug that blocks uric acid production, can also block the fructose reaction. I got to thinking just now that there was probably a clinical trial looking at allopurinol and IR/NAFL... and voila: https://clinicaltrials.gov/ct2/show/NCT00639756
