On the same page with you on olive oil, but cottonseed not so much. Consider that cotton is not typically grown as a food crop so a farmer isn't subject to the same regulations.
After years of congratulating myself that my family never switched to margarine back during the saturated-fat-is-deadly panic as we now know there's little connection between dietary saturated fats and serum lipids, I'm a bit chagrined to learn that there *does* seem to be a connection between dietary saturated fats and insulin resistance (and so eventual T2DM) - at least for some people. Sigh. At least I 'missed out' on the trans fats used in margarines up until a decade or so ago - so there's that.
