I eat a lot of canned fish, particularly sardines and I have to say that in the US I have never seen canned cod. Fresh cod, of course - and salted, which I had to look for (recreating a favorite dish from the Azores). But no canned. Looks like I can use fresh - unless they've done something special in the canning process like those fancy sardines from Portugal.
