From what I've read, prions either don't denature like most proteins (autoclaving instruments for neurosurgery doesn't seem protective) or (IMO more likely but WTH do I know? No firm grasp on proteomics here) they're somehow missequenced and they fold back into their self replicating shapes once they're allowed to rest the same way other proteins go back into shape.
