Good way to sidestep something non-essential, but for anyone wondering an 'emulsifier' is just something that helps keep two liquids that don't normally mix well (the classic one is oil and water) mix and stay mixed. Some emulsifiers aren't highly processed, like stone-ground mustard that is often used in a vinaigrette to help the oil and vinegar stay mixed - and some are chemical 'marvels' like CMC (carboxymethylcellulose) that have been correlated with CVD. Yes, it's a rabbit hole, no need to get into it.
All that said, nice PSA. Glad I'm old enough that the only UPF was potato chips - which I (very much!) had a problem limiting; all I could do was not bring them home from the supermarket, not have the temptation to start.
