On a personal note, I'm dealing with this stuff, too. You wouldn't know it to look at me, but I went from 195lbs (approx. 8% fat) to 130lbs (month in hospital with brain infection, refused food the whole time). I've gained a lot back (185) but 24% of that is fat - and there's way too much visceral fat for me to not have metabolic syndrome. I thought I was being careful, whole foods / water only - but it was pretty much nonstop eating for a while there...
