That might be a function of how they are raised. For instance, compare 100% grass-fed beef to grain-fed chicken. If the steer is eating bright green grass, there will be a lot of vitamin K2 (same for dairy from cows eating the same) which is important for osteocalcin (calcium to bones, aerobic metabolism).
