But be aware that *leaving* those 'tops' on will pull nutrients out of the part you're going to eat - so cut them off and compost / give to your pigs/chickens. The same goes for other root vegetables - excepting with beets you can steam the tops and IMO they're pretty good with pastured butter and a bit of balsamic vinegar.
